New Details on US-distilled Catskill Spirits Absinthe Published 3/31/08
The newest entry into the US absinthe market has recently emerged in the form of Catskill Spirits Absinthe. Cheryl Lins, who became interested in absinthe in 2006, is behind the brand, as covered in the recent Daily Star article. She will be producing it at the Delaware Phoenix Distillery in Walton, New York and hopes to have a limited release around the time you'll be trimming the tree with pop. Cheryl is a highly gifted artist, producing abstract paintings in watercolour and tempura mediums, which can be seen at her website. That said, it's no coincidence that she'll be designing the label herself. We took the liberty of contacting her personally and she assured us she is dedicated to a producing a quality absinthe in the traditional French style, specifically a verte. Cheryl explained that she is still in the early stages of establishing her business and is busy working away at all the fun parts of doing so with all the acquiring of permits, following zoning laws and other such pleasures. She's still confident that the year end release is on track, but she told us to relay the message to keep our fingers tightly crossed! Hopefully those pesky things called laws won't get in the way too much. Once all that rubbish is finally out of the way and Cheryl has had time to finalize things, she has graciously agreed to sit down and allow us a Q&A session for an evening, so keep an eye out for this conversation in the coming months!
